Tasty but needs to cook for a lot longer than 45 min at 325. Next time I’ll bake at 350 for 45 to 55 min.

Absolutely fantastic - ambrosia. My mother has had the same gold standard for zucchini bread, from her mother in law, for decades.
This one beat it.

I'd use more vanilla and cinnamon next time as it was kinda bland. Overall not a bad recipe.
