Great will do it again. My husband had a heart attack so we are trying different ways of eating some of our favourite meals.

I modified slightly by cutting in rounds and stacking them instead of strips. Followed the rest of the recipe and this was easy to serve. One stack per person. It will be made again.

It was great! Easy, used a lot of the garden’s zucchini, the family likes it, that’s all that matters to me!

Zuchinni is not pasta. It's not pasta and it never will be. I'm sorry 😞. I really am sorry. I wish the world was a different place. I wish we could use up all those extra vegetables by cutting them up like pasta noodles and then smothering them in cheese and tomato sauce. The world doesn't work that way though. Zuchinni doesn't absorb the sauce like a real noodle does. You can salt and drain and dry it all day and its still going to turn into a liquid mess. A terrible, sad, liquid mess. The non zucchini flavor was good though.

It turned out really delicious! I changed a lot of things but used this as my base recipe. One thing I do recommend is that you let the zuchinni drain for a lot longer and press in between paper towels with a heavy object on top (I used a sheet pan with some canned corn). This draws out a lot more water. Also I made the mistake of not rinsing the zuchinni after using salt to draw out moisture and the final product was saltier than I would have liked. I also used tomato paste in combination with stewed tomatoes to create a thicker sauce as to cut down on the water so the finished product wouldn't be so watery. Overall great base recipe but there is a lot that can be improved upon👌

This was delicious. I caramelized the onions so I cooked them much longer and added red pepper flakes with the garlic. I also used a giant zucchini from the garden.
