  • 1 cup quinoa (uncooked rainbow or regular, + 1.5 cups water)
  • 3/4 lb. yukon gold potatoes (chopped into 1/2-inch chunks, about 2 1/2 cups)
  • 1 lb. fresh green beans (trimmed and chopped into 1-inch pieces, about 3 cups)
  • 2 large garlic cloves (extra-large or 3, peel left on)
  • 1 Tbsp. extra virgin olive oil
  • 1 cup chopped kale (stemmed and finely, I used lacinato, but curly works fine too)
  • 3 green onions (thinly sliced)
  • 3 Tbsp. seeds (pepita, I added a handful of sesame seeds at the last minute too)
  • avocado (Sliced)
  • 1/4 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 tsp. Dijon mustard
  • 1/4 tsp. Himalayan salt (pink, or fine grain sea salt)

    I made it as to recipe and added a cup of white beans at the end, nice taste. I did add the maple syrup to the dressing, delicious. My husband is a meat and potato man and he loved the taste and consistency. And I loved it absolutely! This will be another meal one night. Yummly!

    This is bangin, & I’m a meat eater. It’s light but hearty at the same time. Bright and refreshing, you know it’s healthy, but filling as well. Very satisfying. Even my two toddlers ate it 🤔. Will be making this again

    I have made this delicious winter salad many times. It is easy to make and is very warming on a cold Ohio night. It is one of my husbands and my favorites!
