amazing!! This was my first vegetarian dish I made. I hate mushrooms, but want to continue to try them until hopefully I like them. This dish made it so easy!! Tasted delicious. Super easy to make. I will be cooking this again.

Great! The whole family ate this. I like it better than traditional sloppy Joe’s.

Added some garlic powder and salt and pepper at different stages and it was delicious! Didn't even miss the meat.

I used frozen carrots after reading the reviews of others I crave lentils on a regular basis, so I will definitely make this again

This turned out to be a great meal. The only thing I think I would change for next time is to cook the carrots down a little bit more so they aren't too crunchy. But other than that it taste great and I'll definitely be making this one again.

Turned out well I would substitute sweet potatoes for carrots. The carrots didn’t cook down as well as the other vegetables and so the consistency was off. I also added turmeric, smoked paprika, and a LOT of garlic, but that is personal preference. Overall a delicious recipe!

Ignore the sloppy joe title. This is a delicious vegetarian meal period. I substituted the lentils with lentil pasta chopped up after cooked instead because well the world is on fire and no one has any unless you want to pay $15 a lb on amazon. People are still afraid to buy lentil and chickpea pasta in a post apocalyptic world :) vegetarian 1 carnivores 0

I made it without the ketchup and added a bunch of seasonings instead. Ketchup on the side for my son. Pretty tasty!

Delicious! And quick, if you use my tips below! My highly carnivorous fiancé was happy with it as well, even asked for leftovers the next day! Some tips to make your life easier:
- buy the onion, celery, and carrots pre-diced from your local grocery store, it will save you a ton of time
- buy organic pre-cooked lentils to save time and avoid dirtying up a pot
- add a little liquid smoke to the browned mushrooms. Yum!
- took another commenter’s tip and used half-ketchup, half-bbq sauce instead of all ketchup
- use a hearty bun or at least toast the bun, that’s just general sloppy joe best practice
- I poured all the mushrooms out on my cutting board, got a huge knife and rough chopped them to save time. This was the best approach because it added some variation in texture vs the uniformity of the lentils and pre-diced veggies
Next time I might add chopped spinach as well to pack in that iron!
