Really good!! Made a few changes tho - didn’t add the chips -didn’t add kidney beans - did the rest of the same, little less salsa, and just baked it in a smaller dish! Still turned out delicious, and just dipped the chips in that!

I made this for my family of eight. Followed This recipe exactly, except for scallions which my store didn’t have so I substituted with green onions. I was surprised how delicious this recipe was. We didn’t even miss the meat! Very falvorful and filling. We’ll definitely be adding to our meatless meal rotation.

So good! I used canned tomatoes instead of salsa, added two diced jalapeños, and used frozen corn.

So yummy. My husband loved it. Doesn’t reheat very well as the chips get stale, but so delicious the day you make it.

Made it without the bell peppers on accident because I had overlooked it... still thought it was flipping delicious!!!
