Silken tofu blended with nutritional yeast, turmeric, and cashew milk wonderfully mimics the texture of chicken eggs in this veggie-loaded vegan quiche. The recipe is a Yummly original created by Sara Mellas.

  • 4 oz. cremini mushrooms
  • 1/2 red bell pepper
  • 4 oz. baby spinach
  • 2 Tbsp. extra-virgin olive oil
  • 1 dash salt (for vegetables)

Did a bunch of substitutions and it still turned out fantastic. Used tomatoes, green onions, red onions, orange pepper, button mushrooms, extra firm tofu. No problem. It was easy and delicious.

It was good. it was not difficult to make since I had a batch of nutritional yeast and tofu on hand. i will say that adding hummus means it wont firm up so nicly, but I though I would experiment a bit. the top has a nice finish

I added red chilli, smoked paprika and used fresh garlic and shallots plus a dash of tamari sauce. I made into 8 mini quiches and they turned out delicious. making them into mini quiches they cooked much faster too.

This is the most tedious quiche I’ve ever made then turned out to be the blandest. This reinforced that tofu should always be marinated.

It held together with a good consistency, but there could be some stronger flavours. Next time I woukd make it with leeks, a loaf of garlic and some more pepper. And also add some more seasoning too.
