A rich, creamy, and savory blend of tofu, nutritional yeast, and Italian seasoning stands in for the traditional ricotta cheese in this hearty layered lasagna noodle dish. The recipe is a Yummly original created by Sara Mellas.


  • nonstick cooking spray
  • 2 lb. firm tofu (drained)
  • 3 Tbsp. extra-virgin olive oil
  • 1/2 lemon (juiced)
  • 1/3 cup nutritional yeast
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 1/2 tsp. Italian seasoning
  • 1 box no boil lasagna (12 oz. per box, egg-free)
  • 4 cups marinara sauce (4 cups is about 36 oz.)
  • 1 pkg. frozen spinach (10 oz. per package, thawed and well drained)

    Ok - consistency of tofu is a good match to replace a cheesy version. Cooking times were perfect. Tofu being tofu - bland - the taste is a bit non-existant if you don’t have a good marinara. And you must be more generous than the guidelines regarding salt and seasoning

    I love how this turned out! Although I used a TON of more spices than it called for, if I closed my eyes tight enough, it tastes like the real thing. I will definitely make this again.

    absolutely phenomenal didnt measure out sauce just kind of poured a light layer over when it was time also used gluten free pasta. perfect will make again

    Turned out excellent. I used cottage cheese instead of tofu. My mother did advise me to use more spinach and less cheese though.

    I’ve never been a big fan of lasagna even before going vegan, but this recipe is super easy to make. The longest part is just the oven process. I made an 8x8 pan of this since I only cook for one and it came out amazing! There’s many ways to alter this dish to make it just how you like it. Next time I’ll add mushrooms and vegan meat crumbles since a few others said that it really up’ed the dish. Super amazing recipe!

    This turned out pretty good. I added more seasoning as most other people suggested and I found it a bit dry so also added more sauce but its easy to makr adjustments ans suit to taste.

    It was great in terms of matching the flavor of lasagna. However, the seasonings need to be upped a bit. I found it was a little bland tasting for my preference as I am used to foods that are well seasoned and popping with flavor. It's great though because I can tweak the recipe and add more seasoning next time. Also, as advice choose a good marinara sauce to add more flavor.

    Surprisingly Delicious! With all of the work to prepare a lasagna, I was skeptical of trying a tofu ricotta, but this recipe turned out great. After tasting the filling, I added an additional 1/2 tsp of garlic powder and 1 tsp of onion powder. The whole family loved it!

    So healthy it wasn’t very filling, made me feel light and agile after eating. Was very simple to make, only reason I didn’t give five stars was because I am a biased meat eater - hehe ☺️

    Great estimated times. Great balance of flavors and easy to make. We used fresh spinach and it turned out awesomely. My vegan fiancé ate a bunch of it and she doesn’t eat a lot in one sitting! Did sub and can’t think of anything we would change.
