Very easy chili and perfect for the fall!

Ingredients

  • 1 can black beans
  • 1 can red kidney beans (Dark)
  • 1 can light red kidney beans
  • 1 can crushed tomato (or Diced)
  • 1 can tomato juice
  • 1 1/2 Tbsp. ground cumin
  • 1 1/2 Tbsp. chili powder
  • 2 bay leaves
  • salt
  • 1/4 cup vegan cheddar cheese (Shredded)
  • 1 yellow onion (Diced)

    1. Add all ingredients into a large soup pot ( I don't drain the bean juice)
    2. Bring to a slow boil
    3. Let simmer on low for 3-4 hours
