  • 1/2 onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 block extra firm tofu (pressed & crumbled into small bite-sized pieces, *see note)
  • 1/2 tsp. turmeric
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cumin powder
  • 1 tsp. sea salt (more to taste)
  • 2 cups vegan cheese (shreds, more if preferred, or homemade)
  • 4 tortillas (10-inch)

    AMAZING WOULD RECOMMEND I made this without the vegan options and it looked the same and tasted the same.

    Turned out really good. As I was preparing the ingredients a part of me was wondering how it turn out... I wasn’t too hopeful. But once everything is assembled it is * chef’s kiss* magnific! (Also taste great with salsa on the side)

    Didn’t realize it said pressed tofu until after but it worked perfectly with tofu that was in water anyway

    Delicious! My tortillas were too small so I scrambled it all together and put it on toast. Absolutely amazing!
