A mixture of black beans, vegetables, and spices make these enchiladas a hearty, delicious dinner. They have no meat or dairy, but they're plenty flavorful and will be sure to fill you up!


  • 2 cans red enchilada sauce (10 oz. per can, plus more for serving (optional))
  • 1/2 red onion (medium)
  • 1 red bell pepper (medium)
  • 1 jalapeno pepper (small, optional)
  • 2 garlic cloves
  • 1 tablespoon extra-virgin olive oil
  • 1 can black beans (13.5 oz. per can, drained and rinsed)
  • 1 can Hatch mild diced green chiles (4 oz. per can)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 12 soft corn tortillas (6-inch diameter)
  • fresh cilantro (optional, for garnish)
  • hot sauce (optional, for serving)

    Added cheese to ours so it wasn’t vegan anymore, but very tasty! The recipe yielded 6 large enchiladas for us. Yum!

    By mistake, picked up the spicier enchilada sauce. It was still a hit with the spicy food lovers of the family. Was asked to make this again very soon! Easy to make and smelled delicious. Used flour tortillas because store was out of corn tortillas. Worked just fine.
    It was good! A lot better than I thought I was missing coriander though.

    This was a really easy, yet extremely tasty dish. We went lighter on the jalapeños and green chillies so as not to blow our heads off, but the end result was fabulous. Can’t wait to try it out on the rest of the family :)

    Really good! Friend of ours is vegan so I made her a small dish of this and added chicken and cheese to the non vegan and it was equally as good! Add some Egan cheese or cheese to it to give it a melt creamy goodness was a nice touch as well

    I loved it so much! I didn’t have coriander so I added 1 more tsp of cumin instead. I made it a little spicy! Loved it and will definitely make again! :)

    Made own enchilada sauce, used flour tortillas, added 1/2 cup of corn and shredded cheese over the top. I am not vegan was very tasty. Light on the spice for my liking.

    Love this! Did 2x in 3 weeks :) I made my own enchilada sauce and boiled black beans but recipe is easy to follow and turned out really delicious!

    The enchiladas tyrned out amazing, my husband absolutely loved them and took some for lunch as well. For those making it, I would not that the corn tortillas do fall apart, it helps if you warm them up when rolling (and seperate them once warmed as they stick)

    delicious! pretty simple to make, although I did have a bit of an issue with the corn tortillas falling apart. I also sprinkled a bit of cheddar cheese on top. the only change I would make would be to decrease the amount of enchilada sauce, but overall very good!

    It was delicious! I put some cheese on top and served it with sour cream and guacamole. I stayed as close to the listed ingredients as I could, but used what I found at my local grocery store. They only had green enchilada sauce and the green chili was mixed with tomatoes. Anyway, the flavor was great, despite not using meat. I will be making this again.

    Good recipe. Missed adding the jalapeño in the cooking phase, so they were a little mild. Added cheese on top and it was good!

    They turned out delicious! I know this is a vegan recipe but I am not vegan so I topped mine with cheese after I put on the sauce. For those cooks who are vegan I highly recommend using a vegan friendly cheddar cheese to add to their enchiladas. Will definitely be making again!
