Directions
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Bring a large pot of water to a boil. Add a generous pinch of salt. Once boiling, add the ziti to the water. Cook, stirring occasionally, until the pasta is al dente, 9-10 minutes. Drain the pasta in a large colander, and rinse thoroughly with cold water. While the pasta cooks, prepare the tofu ricotta.

Wasn't a hit with my non-vegan family, but I enjoyed it! Super easy when using store bought pasta sauce.

Loved it! I added a little extra olive oil and some more seasoning in the blender, and I used a spicy marinara sauce. Will definitely be serving to guests as well!

I followed the recipe exactly, except using macaroni noodles for the ziti. Unfortunately the family didnt like it. I put ketchup all over it to make the kids eat it. Maybe my spaghetti sauce wasn't flavourful enough. But I wont be trying this one again unfortunately.

It turned out pretty good. I didn’t mix the sauce with pasta, will do next time. I added lite life Italian sausage. Not bad, will make again.

I was shocked at just how delicious this truly was. I brought it to a Christmas party because I knew there would be two other vegans there and our food choices would be limited if we didn’t go prepared. I must say, it was a hit and I can’t wait to make it again!
