A rich and creamy, soy-based ricotta is the secret ingredient in this hearty, dairy-free baked ziti. The recipe is a Yummly original created by Sara Mellas.


  • nonstick cooking spray
  • 1 pound ziti
  • 1 pound firm tofu (drained)
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1/2 lemon (juiced)
  • 3 tablespoons nutritional yeast
  • 3/4 teaspoon salt (plus more for pasta water)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon Italian seasoning
  • 3 cups marinara sauce (for ziti)
  • 1 cup marinara sauce (for top of dish)
  • 1 cup vegan Parmesan cheese (optional, for top of dish)
  • fresh basil leaves (or fresh parsley; optional, for serving)

    Loved it! I added a little extra olive oil and some more seasoning in the blender, and I used a spicy marinara sauce. Will definitely be serving to guests as well!

    It turned out really well! Both my wife and I enjoyed it fully!
    I followed the recipe exactly, except using macaroni noodles for the ziti. Unfortunately the family didnt like it. I put ketchup all over it to make the kids eat it. Maybe my spaghetti sauce wasn't flavourful enough. But I wont be trying this one again unfortunately.

    Tried this recipe swapping paneer for tofu :) hubby says it was like his "childhood blanket" comfort food now!
    It took a while but it was soo good and really easy actually. I loved it

    It turned out pretty good. I didn’t mix the sauce with pasta, will do next time. I added lite life Italian sausage. Not bad, will make again.

    I was shocked at just how delicious this truly was. I brought it to a Christmas party because I knew there would be two other vegans there and our food choices would be limited if we didn’t go prepared. I must say, it was a hit and I can’t wait to make it again!
