  • 1 onion (peeled and chopped)
  • 2 cloves garlic (peeled and minced)
  • 2 sprigs fresh thyme (or ½ tsp dried thyme)
  • 1 stick celery (sliced)
  • 2 medium carrots (peeled and chopped)
  • 2 medium potatoes (peeled and diced)
  • 1 liter chicken stock (good-quality, ideally homemade, but water with stock cubes will work too. Use water plus bouillon for gluten free)
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 400 grams cannellini beans (cooked, washed and drained)
  • 2 cooked chicken breasts (skinless, shredded)
  • 100 grams chopped kale
  • 1 bunch fresh parsley (chopped)

    This was great. Its a good starter...I chsnged some ingredients and added others to fit my liking and what I already had. I added chorizo, leeks, squeeze of lemon, half n half and substituted spinach for kale and rice for potatoes. It was yummy. thank you.

    really good, I used sweet potatoes and or have it a pleasant hint of sweetness to pair with the savoryness of the soup.
