Turned out great. My hubs won’t eat stewed tomatoes or kidney beans. So I sub’d in hot tomato sauce (for a little kick) and Great Northern beans. It was delicious. So clearly a forgiving recipe in terms of small changes.

Recipe was simple, delicious and quick to make. I used ingredients I had on hand: black beans, canned potatoes and canned dice tomato with green peppers.

Quite tasty. The servings are quite big. I would say it’s more like 6 servings. I added a sprinkle of Parmesan on top. Yum

Was very good. Even my kid liked it. The broth was a little sweet for me. So next time I will drain the tomatoes first. I also added a little thyme.
