  • 5 pounds pork shoulder (fresh untrimmed)
  • 1 can Red Gold Diced Tomatoes
  • 1 dash sugar
  • 1 cup fennel (small diced)
  • 1 cup celery (diced)
  • 1 cup carrots (diced)
  • 1 cup white onion (diced)
  • 5 cloves garlic
  • 4 sprigs fresh organic thyme
  • 2 cups pure cherry juice
  • 1/4 cup hoisin sauce
  • Red Gold roasted tomato puree
  • 2 cups chicken stock
  • 2 cups beef broth
  • 3 tablespoons sour cherry jam
  • 1 tablespoon Dijon mustard
  • 1 chipotle pepper (chopped)
  • 3 tablespoons salted butter
  • 1 1/2 cups water
  • 6 ounces salted butter
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 2 tablespoons Dijon mustard
  • 1 cup aged gouda
  • 6 eggs
  • 1 pint heavy cream
  • 4 ears corn
  • 1 shallot
  • 1 garlic clove

    Directions

    1. Pork : Cut pork into uniform chunks, salt and render brown on all sides. Separate meat from juices. Set meat aside.
    2. Red Gold Tomato Candy: Drain 1 can Red Gold Diced Tomatoes and roast in the oven with salt and pepper and a sprinkle of sugar. After tomatoes are roasted, blend to a paste and set aside
    3. Braise: Start the braise by sauteing 1 cup diced fennel, 1 cup diced celery, 1 cup diced carrots, 1 cup diced white onion, 5 cloves garlic, and 4 sprigs thyme. When veggies are caramelized, add in 2 cups cherry juice, 1/4 cup Hoisin sauce, and Roasted Red Gold tomato puree. Braise in a pressure cooker for 30 minutes.
