Amazing I added some ceyanne pepper for a kick but it was great. We have family that doesn’t eat sausage or bacon so I substituted for chicken sausage and turkey bacon.

Best breakfast casserole I’ve ever had. I used Owen Hot Breakfast Sausage and added a couple of jalapeño peppers. It was outstanding! I will make it often!

So yummy. I made it with Jimmy Dean hot sausage and peppered bacon, and served it with salsa and it was so good. My two year granddaughter kept saying Yum!

I made this and took it to the office this morning. They LOVED it, so did I! I used HOT breakfast sausage. I almost added a little bit of finely diced jalapeno but decided not to and was glad because the hot sauage was plenty spicy. I only had 10 eggs and it worked out fine. I did all the prep work last night so all I had to do is saute the veggies, stir the eggs in a bowl and assemble and bake. Got ready for work while it was getting all cheesy and melty and delicious. I'll cut the 40 mins down next time, it was a shade darker than I prefer but my oven is probably a little hot (gas). This is a very good recipe and I will for sure make it again and again.

The velvetta cheese isn’t a good addition, and 40 minutes was too long. Every other ingredient is good together.

It's good but it's a salt bomb. Next time I would not use Velveeta and increase sour cream and cheddar. I would also only use bacon or sausage but not both.

I made this for a work brunch. I omitted the peppers for preference, so I added another cup of hash browns. I did add salt and pepper to the egg mixture because I didn’t want it to be bland. It was really delicious, and I got rave reviews! Would also be great for a holiday breakfast. I think I may try adding a can of drained rotel or diced tomatoes next time. Will definitely make it again! Makes a lot more than 4 servings. I think I cut it into 16 pieces, but some people did have 2.

Made this for New Years Day brunch. Improvised a little (used more shredded potatoes and since I did not have velveeta, I used more shredded cheddar cheese). It hit the spot this morning!

Yum. I thought it was great. It was a little bit moist as I needed to cook the bacon longer the grease made the inside a bit wetter than I’d like. Next time I would cook the bacon longer to get more of the grease out and then pat it dry.

excellent! Took it to a work party breakfast and everybody raved about it! I used fresh southwest seasoned hashbrowns and hot sausage to zip it up a little.

Family loved it.. Took longer to get into the oven than I thought it would. I added an extra pound of sausage added Diced tomatoes as topper. My family devoured all of it!

This is one of the best breakfast casseroles I've tried. I have made this recipe a few times and it is always a hit. I typically split the recipe into multiple containers and freeze a few for easy weekday breakfasts. This makes way more than 4 servings, our family normally gets 10-12 servings.

I was a big hit when I brought this to brunch for a friend's birthday. I made without bacon or Velveeta and I swear it was being inhaled by ravenous hungover partygoers. Served with watermelon and salad and mimosas. Yum!

Made it just like the recipe said. It was Bland, and the Potato portion got mushy. Would not make this again.
