  • 2 inches ginger
  • 3 inches lemongrass (the soft stalky part of)
  • 4 kaffir lime leaves
  • 7 basil leaves
  • 1 tablespoon vegetable oil
  • 2 tablespoons fish sauce
  • 0.5 kilograms boneless skinless chicken breasts
  • 300 milliliters unsweetened coconut milk
  • 15 cremini mushrooms (quartered)
  • 1/2 red pepper (capsicum, thinly sliced)

    Very nice recipe but amount of chilis is extreme (perhaps fresh asian chilis are much more spicy). Quite a lot of veggies so 300gr chicken is enough already. For the paste: use only three fresh asian chilis, add a few tablespoons tomatopaste, some water and half a red bellpepper (this creates volume, improving blending as well) and all other ingredients required for the paste. At the end add one or two table spoons fish sauce, lot more tomatopaste, lime leaves and smashed lemongrass for another ten minutes. If no brown sugar use honey, soy sauce or regular sugar instead. Sriracha or chili-oil/vinegar to taste at end.
