The family loves this recipe. I leave out the maple syrup and use brown sugar instead. Substitute sesame oil for coconut oil.

Made this in my rice cooker, just dumped all the ingredients in and let it cook, stirring a couple times. Pretty tasty, it didn't have a ton of coconut flavor so the additional toasted coconut on top was nice. Served it with a sweet chili chicken.

I added the toasted coconut and a little extra maple syrup. Chopped cilantro was a great addition. Will make again!
