    Great flavor - I love hondashi and the idea of mixing it together with eggs and sugar was a little odd, and I wasn’t sure I’d love it, but this is now my go-to for omelettes. I have hondashi stock (tiny pellets). Learn from my flavorful and often overly salty mistakes: if the recipe calls for 3 T hondashi, then 1.5 T hondashi and 1.5 T water will be just about right! Also I use turbinado cane sugar - for this recipe, the “fancy” sugar I usually reserve for my tea seems right to use. I haven’t used white sugar so I am really not sure how that would turn out.
