    This hit the spot! I liked that it was a bit more veggie forward. Added 1/3 c of frozen roasted corn (thawed) while cooking the beef and, like another reviewer, subbed fresh parsley for cilantro in the dressing because that’s what I had on hand. Will make this again!

    Delicious!!!! We didn’t have cilantro, so I threw in some parsley and green onions into the dressing everything about this was on point!

    Easy to make! I used turkey meat and black beans to top it I used tortilla strips and sunflower seeds that added another level of flavor. The dressing is very light and has nice flavor!

    It was super delicious. The dressing was very flavorful and made this dish complete. I love that it was filling without the full feeling. Super easy and tasty will definitely make this over the traditional taco salad.

    It turned out great! Lots of flavor and really filling for me and my fiancé! It means a lot that it’s low in calorie and still managed to keep us full! I cooked the meal for 4 servings worth like it was originally listed and the two of us actual stayed true to the serving sizes throughout the recipe and had a good amount for left overs after. Meals like that can be hard to find! This was also pretty easy to make! Doesn’t take much actual cooking other than the meat mixture that goes into the salad. Just getting everything chopped and that cooked and then your done! I felt much healthier eating this than the tacos and burritos and sides we usually cook for Mexican dinner. Will definitely be making this again! :)
