  • 9 oz. refrigerated cheese-filled tortellini (uncooked, Amy said you can use dry and recommended Barilla four cheese or Costco tortellini. I used Buitoni)
  • 1 medium zucchini (thinly sliced)
  • 1 large carrot (peeled and chopped, I use the equivalent of baby carrots instead and sliced thin)
  • 1 pt. cherry tomatoes (halved)
  • 4 green onions (with tops, thinly sliced)
  • 1/4 cup fresh parsley (snipped, or 4 tsp. dried parsley if you don’t have fresh, I used fresh)
  • 1/2 cup ranch dressing (you’re favorite, I used a little more and made the Hidden Valley Ranch from the packet)
  • Parmesan cheese (– to taste)

    My family loved this salad. It is going with us today to a large family reunion. I loved making this salad because it gives you the flexibility to adjust ingredients to what you have on hand. I had leftover cooked chicken that I diced & threw in. Turned from a side salad to main entree. LOVE it - thanks for sharing.

    Perfect summer salad. We used feta rather than parmesan.We will certainly make this again after my Wife and kids loved it!

    Very quick and easy to make. We added in slices of hot salami to spice it up a bit
