Forgot to add milk, didn’t realize until I read the recipie again, which means we didn’t even miss the milk. Consistency was great, would make it again.

Delicious I did not use 2 separate pans to bake I mixed all together to put in oven

Made this by baking on a large sheet pan for 23 minutes. I used 1/3 cup milk, ~two cups shredded Colby cheese, 11 eggs, one red pepper, one green pepper, 2 cups spinach and some tomato. Served with siracha and avocado- so delicious!
For on the side I patted dry canned potatoes, cooked in butter with salt, garlic, pepper and onion powder. Next time I’ll use real onions but overall great brunch!

I sautéed some carrots along with the spinach, and added some homemade yogurt and freshly roasted diced green chilis in with the egg mixture. Sautéed and baked it in an iron skillet
