Really good. The only thing I changed was less sugar because I don’t really like my salad dressings to be sweet. Used half the amount and added a little bit more Dijon. Made it as a dinner salad, and my husband and I both loved it. It’s radt and pretty fast to make. Will make again.

It’s an all-around delicious salad. The dressing doesn’t overpower the spinach and the egg is a perfect addition. The only thing that I do differently is that I cook my eggs soft-boiled. This adds a further complexity to the dish that wows the crowd. The only trick is removing the shell from the soft-boiled eggs without exposing the yolk!

Delicious, the dressing is just a bit tart for me so will add a little more sugar or cut back the vinegar and use some water next time! But it’s really good and I really liked that the onions and mushrooms are cooked!

I forgot I didn’t have mushrooms, so I roasted some red peppers in the same pan right after the onions. It still turned out great.
