Great casserole. We’ve made it twice and second time was better because we doubled the spices and added crushed tortilla chips mixed in with the cheese on top for some crunchy texture. Non vegan family members said it was absolutely fantastic.

Turned out great! Added chili powder, garlic powder, onion powder and paprika along with peas. Was well received!

Tasty! I used chives from my patio garden in lieu of green onions; in lieu of adding cheese and baking, covered pot after adding diced tomatoes. Simmered for 10 mins. Perfect hint of seasoning!

Delicious! We all added a little hot sauce to spice it up a bit and my non-vegan teenage son added dairy cheese but everyone cleaned their plates

Delicious! I use as a burrito filling, add salsa and a little romaine and it makes a tasty and healthy burrito!

Pretty dull recipe. I think it relies on the cheese because otherwise, there’s not a lot of flavor, and the veggie to quinoa ratio is way off. Too much quinoa, too few veggies. I added rotisserie chicken to mine.

My family and I really liked this recipe. The flavors are all balanced. I added more cilantro as a garnish. I would make it again definitely.
