In Puerto Rico, crunchy and tender sorullitos de maíz are a favorite street food snack. These fried cornmeal fritters, which are either plain or stuffed with a salty, semi-firm cheese, are often paired with mayo-ketchup for dipping (a simple combination of equal parts mayonnaise and ketchup, seasoned with garlicky adobo spice blend). But in our opinion, they’re even better on their own dunked in a cup of strong coffee. Look for the key ingredient, pre-cooked fine cornmeal, called harina de maíz (P.A.N. brand is a favorite brand) in the Latino foods section of grocery stores and online. Either the white or yellow cornmeal works just fine for the recipe. The recipe is a Yummly original created by Reina Gascon-Lopez.

- In a medium mixing bowl, combine cornmeal and salt. Set aside.
- In a small saucepan, bring water and butter to a simmer. Carefully pour water mixture into cornmeal, stirring with a silicone spatula to get any big lumps out and pressing the masa into itself to make sure all of the water is absorbed. It should have the consistency of Play-doh or wet sand. Set aside and let stand until cool enough to handle.
- Cut 8 cheese sticks, each about 3 inches long and ½ inch wide and thick. Save scraps for other uses.
