This turned out great, I ended up using chicken breast tenders and pulling it apart. It’s a very versatile dish, and it definitely gave me a few ideas of how to use it in the future.

Made a few modifications: seasoned the chicken and browned it with onions on the stove and added it to the pot. Cooked on high in my crockpot for 3.5 hrs. Added parmesan and shredded mozzarella cheese when plated. Served with fresh bread (for everyone else, since I'm doing Keto now)
IT WAS MARVELOUS!! My three y/o who only likes fries, chicken nuggets, bread, and fruit, loved it too.
Hubby & kiddos requested I keep this one in rotation.
