Description

Directions
- Rinse mushrooms and slice about 3/4 inch thick. Cut bell peppers into 1-inch pieces. Cut olives in half. Chop rosemary. Set vegetables aside. Dice onion and mince garlic.
- Heat oil in a large frying pan over medium-high heat. Add onion and garlic and cook, stirring occasionally, until soft and translucent, 4 to 5 minutes. Meanwhile, pull skin from chicken, cut it free, and trim fat. Discard skin and fat and arrange chicken in a single layer in a 6-qt. slow cooker. Scrape onion mixture over chicken.
- Heat oil in the same large frying pan over medium-high heat. Add reserved mushrooms and rosemary, the salt, pepper, and oregano. Cook mushrooms, stirring every so often until they start to brown, 4-5 minutes. Transfer to slow cooker.

This was just okay. Not bad, but nothing great either. The sauce has decent flavor, but the chicken didn’t really soak any of it up leaving it rather bland. If I could think of ways to improve it, I’d probably give it a 4 instead of a 3. But I just keep coming up empty on what would save it.
