  • 2 cups mushrooms (chopped)
  • 2 Tbsp. minced garlic
  • 10 fresh spinach (or z packages frozen, defrosted + water squeezed out)
  • salt
  • pepper
  • 1/4 tsp. red pepper flakes
  • 1/4 tsp. nutmeg
  • 30 oz. non-fat ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 9 whole wheat lasagna noodles (prepared, see note*)
  • 24 oz. spaghetti sauce (I used and suggest a tomato basil variety*)
  • 2 cups part-skim mozzarella cheese

    Very good and easy to make.

    It’s good and tasty. I added mozzarella cheese with the other cheeses in the filling and some cinnamon and white pepper instead of the nutmeg, because I didn’t have any.
