  • 1 cup onions (diced)
  • salt
  • pepper
  • 2 tablespoons worcestershire sauce (for gluten-free use Lea & Perrins)
  • 2 tablespoons ketchup
  • 1 tablespoon mustard (I used a spicy brown mustard)
  • 1 tablespoon pickle relish
  • 1/3 cup tomato sauce (can or jarred)
  • 3 tablespoons water
  • 1 cup cheddar cheese (lite, mozzarella or blend, shredded, I used Trader’s lite Mexican blend)
  • 4 red bell peppers (large, yellow or orange, each about 3½ inches high and 3½ inches wide)

    Love this recipe-use white rice/jasmine rice sometimes and sub in mild sausage-not as healthy that way but delicious either way.

    Awesome recipe. Easy to make.I used tomato sauce in the bottom instead of water, it held the flavors in the pepper and it gives the pepper even more sweetness.

    These were easy to make and my husband really enjoyed them. He has always been a fan of stuffed peppers so it's nice to have a low calorie recipe for them.
