- Preheat the oven to 350°F.
- Line a roasting pan with heavy-duty aluminum foil and position a roasting rack inside of it.
- Pat the pork loin dry with paper towels, and rub with olive oil. Season the pork loin liberally on all sides with salt and black pepper. Sprinkle the garlic powder, paprika, and dried parsley evenly over the surface of the meat.

So good!! Tender, juicy and flavorful!! I added smoked paprika instead though! Kids inhaled it!!

Try adding a honey-Mustard glaze when the meat reaches 120F, maybe a bit of orange zest as an optional ingredient to the glaze. Otherwise, I'll stick to BBQ rub, or S&P with sage, garlic and rosemary, a classic. Sometimes I just do a plain S&P with garlic, I may try the paprika on 1/2 just to see, but ......... meh.

Really good, nice and tender and soft could use more flavor but other than that would make again

This is the simplest of recipes. Pork loin is a go to meal for us as it is dirt cheap where I am. Great for sandwiches the next day, I sear it all over in a skillet first then sauté up some sliced mushrooms and onions in the pan with butter and oil, deglaze with some white wine, add some fat free sour cream and you have a simple mushroom cream sauce for the pork. Useful as the pork loin is so lean it can get dry sometimes.

I work at an aplliance store and made this for lunch. Everyone loved it. This recipe is simple and delicious. I will definitely be making it again.
