    I made this with frozen Ore Ida potatoes, a can of evaporated milk, 5 eggs, ham, and a 2c package of shredded cheese. It was fully baked after 45 minutes and was delicious!

    I love this casserole! It is quick and easy for a weekend breakfast. Also, I make it ahead of time for weekday breakfasts. My husband cuts out slices and makes a breakfast sandwich for himself. I add turkey bacon and cheese to the mix.
