    The ricotta gnocchi are INCREDIBLE! Fluffy, light crunch, and not chewy at all. I had ~5 oz of ricotta to work with, so I adjusted the recipe accordingly — 1 egg and 1/3 everything else. I did not have a pre-prepared scampi therefore I attempted my own, it was beyond simple! Olive oil, butter, garlic, white onion, dry white wine, lemon and the shrimp. Kale was my leafy green on hand and the flavor was great!
