    Really delicious and the family loved these enchiladas!! This is the first time I made them and I cheated and used canned enchilada sauce. I will definitely try to make my own next time. I did add onions and roasted red peppers to the sauce to add a more veggies. I served the enchiladas with cilantro rice, refried beans, and corn.

    Not too bad! This was my 1st time making it, I goofed up on a few steps. I think it needed more enchilada sauce than it called for, or maybe I used all of it when I was cooking the chicken. Either way, it was still really good! Ill make it again, and just have extra prep time, so I dont run I to any more hiccups

    I took the suggestion and added sautéed onions and bell peppers. I also added black beans. Very good recipe!

    It was DELICIOUS. I used medium canned enchiladas sauce instead of making my own though. The only thing I wished I’d done was sauté some onions and bell peppers and smashed them in there are well. Overall, super good.
