- Preheat oven to 500°F. Place a sheet pan on center rack of the oven as it preheats.
- In a large bowl, combine chopped rosemary, the olive oil, 1 1/2 Tbsp. vinegar, the garlic, salt, and pepper.
- Cut bell pepper, onion, broccoli (if needed), and chicken into 1- to 1 1/2-inch pieces. Pull onion chunks apart into layers with your fingers. Add ingredients to bowl with seasonings along with cherry tomatoes, and toss to coat well.

Fantastic! I added Snap Peas and used Orange Bell peppers instead, just for more color.
It’s pretty quick, very healthy, and not a lot of cleanup!
