My family asks for this ALL the time and have shared the recipe over and over. We love it on meatless Monday served with naan bread. Because we often eat in shifts in our family, I make the sauce and set aside then each person uses the poacher to make their own eggs so we don’t bake it.

I used herb and garlic spiced tomatoes paste and I was a little liberal with the feta. Delicious dish!
