Suggested Modifications for a heartier dinner-salad recipe:
1 1/2 tsp canola oil instead of veg oil
2 teaspoons toasted sesame seeds
1.5 cups sliced peaches
2 stalks celery chopped to 1/4 inch pieces
2 green onions chopped
1 oz. alfalfa sprouts
1 grated carrot
1 cup pea pods chopped
2 cups Earthbound farm spring mix
2 cups Earthbound farm baby arugula
Low sodium soy sauce
1/4 tsp honey
black pepper to taste
Instructions
Sauté peaches in 2 tbsp butter, remove when brown
Add scallops to same pan, add 2 small cloves garlic and 1/2 tsp. soy sauce
Add peaches and scallops to bed of greens and vegetables. Top with dressing and pepper to taste.
Sesame ginger/soy dressing didn't compliment the peaches. We usually use a balsamic or lemon vinaigrette with this salad for a lighter approach.

The salad was great...but I thought it needed something for a dinner salad. I added a little chopped carrot, cucumber, chick peas and radishes. It turned out perfect.
