  • 28 oz. tomato sauce (can, or jarred tomato sauce, + more if needed)

  • 1 pinch saffron threads
  • 4 squid (small, cleaned small, sliced or chopped)
  • 2 cups paella rice (medium-grain Spanish, or risotto rice)
  • 3 cups chicken stock (plus 1 to 2 cups more if needed*)
  • 1 cup dry white wine
  • 1 lb. spicy Italian sausage (chopped, or broken up)
  • 12 oz. white shrimp (fresh, Wild)
  • 1/2 cup cherry tomatoes (cut in half crosswise)
  • fresh parsley (finely diced for garnish, optional)
  • 2 Tbsp. extra-virgin olive oil
  • 2 Tbsp. butter
  • 2 shallots (minced)
  • 3 cloves garlic (minced)

    Made lots of changes because I only had a bag of frozen mixed seafood but it was still delicious. Definitely a good meal.

    I used a half cup less of rice, only one can of tomato sauce, and about double the smoked paprika portion. Also, shell on shrimp for extra seafood flavor. Would have been good with a dash of fish sauce as well. Also I added peas for texture. It’s really a delicious recipe, and it’s fairly versatile. Also, add a nice big squeeze of lemon at the end of cooking !

    Very flavorful. Skipped the sausage for some clams. Maybe less time less tomato sauce.
