Description

Blend a cheese-laced Dutch baby batter in a jiffy in the blender, then bake it in a hot skillet while you throw a quick salad together. There’s barely any chopping involved here, thanks to handy pre-washed baby arugula and jarred roasted peppers. Serve the Dutch baby with flaky hot-smoked salmon or trout to make it extra filling. Don’t have either? Toss a can of good-quality tuna with the salad. It’s a highly customizable dinner that hits the table in half an hour. The recipe is a Yummly original created by Sara Bir.

    Directions

    1. Preheat the oven to 450°F with a rack in the center. Set a 10-inch ovenproof skillet (cast-iron works best) in the oven to preheat at the same time.
    2. Combine milk, eggs, 1 tablespoon olive oil, the flour, ¼ cup Parmesan, and ¼ teaspoon salt in a blender. Blend on high speed until very smooth and the consistency of heavy cream, 1 minute. Set aside.
    3. Pour 3 tablespoons olive oil into the hot skillet and return it to the oven until the oil is rippling, 30-60 seconds.
