    My husband and daughter loved it. I’m on the fence, but I’m pregnant so I’m not sure if that has something to do with it. My son didn’t like it that much (he’s six) but still ate it. Willing to try this again with some garlic and onions and a side of vegan ranch for the kids.

    This was fabulous! Made this for my husband and myself and there was plenty for leftovers for the next day. Very flavorful.

    Absolutely delicious. I've been craving some veggies after all the holiday eating, and this hits the spot. I added half a dozen garlic cloves that I first crushed with the side of my knife for extra flavor. My veggies were: zucchini, yellow squash, grape tomatoes, red potatoes (with skin), mushrooms, broccoli. I didn't have the correct baking pans, so I just made half the recipe and put it in two casserole dishes. Only had to bake about 20 minutes, taking out to stir once. Will definitely be making again. Easy and delicious!
