Absolutely delicious. It also smelled amazing as it was roasting. I added croutons, Parmesan cheese and a little cream as a topping.

I added some sugar to counteract the acidity of the tomatoes and it really brought the soup together!

I made this today. Didn’t have fresh tomatoes so I sauteed the onion and garlic in olive oil then added two cans crushed tomatoes. I also added 1 teaspoon of sugar to cut the acid along with some basil, oregano and crushed red pepper. I used an immersion blender to purée the onion after it finished cooking. It was delicious!!!

So good! I tweaked it but used the base recipe. I added garlic powder, onion powder, paprika, oregano and half & half. Fresh Basil to top and smoked white cheddar grilled cheese on rosemary bread. This was till a delicious meal and I WILL be making this again!

Excellent tomato soup! Went great with some grilled cheese sandwiches and homemade croutons. My only issue is it needed a tiny bit of something to cut into the acidity.

Fantastic soup. Didn’t think it would taste as good as it did given how easy it was to make. Just added some basil to go with the parsley as a garnish.

used miso paste (2tsp) with quarter cup of water and 4 sweet peppers and half tsp tumeric. garnish with scallion and grated manchego and pecorino cheese😋🌺

Recipe is really good , I added a brick of cream cheese to soup and it turned out amazing .

It was good, but a little citric. However, adding some full cream milk or cream helps, and it’s nice and flavorful.

The only modification I made was to add some basil! It was great my children both ate it without complaint as well!
