Definitely will make these again. I added the Parmesan cheese when they came out of the oven

Tastes great! I made twice the batch and added 1/4 cup more kale for each batch (so in total I did 2.5 cups of kale). I think I’d add some sautéed sweet onions next time. I used cheddar cheese because it has significantly less sodium (gotta watch my intake!). So I ddnt use any salt at all - just the flavor of the cheese. I also over cooked them a bit - I thought the egg was still runny but it was just the cheese looking all shiny haha make sure to not fill too the top or they’ll overflow mine did that - I over filled them because I didn’thave enough cupcake holders.

OMG. This was a fantastic side dish! I sprinkled some dried onions and garlic on them before roasting.
