    Loved it! As a vegetarian , I would have been happy just eating the stir fried veggies but all together it was delicious. Veggie broth works good too. Risottos are a good cold night meal but many of them lack veggies, outside mushrooms and onions. This one packed it all in, in one large pot. Would definitely make it again when the kid is home. She doesn’t like mushrooms but likes risotto. Perfect!
