  • 1 tablespoon unsalted butter
  • 3 1/2 cups cake flour
  • 1/2 cup unsweetened cocoa (not Dutch process)
  • 1 1/2 teaspoons salt
  • 2 cups canola oil
  • 2 1/4 cups granulated sugar
  • 3 large eggs
  • 6 tablespoons water (3 ounces red food coloring or 1 teaspoon red gel food coloring dissolved in 6 tablespoons of)
  • 6 tablespoons red food coloring (or 1 teaspoon red gel food coloring dissolved in 6 tablespoons of water)
  • 1 1/2 teaspoons vanilla
  • 1 1/4 cups buttermilk
  • 2 teaspoons baking soda
  • 2 1/2 teaspoons white vinegar (.)
  • 8 ounces cream cheese (room temperature)
  • 1/2 cup butter (room temperature)
  • 3 cups confectioner's sugar (sifted)
  • 1 teaspoon pure vanilla extract

    I had 0 experience baking and yet this turned out great, it tasted so good! I didn't have any buttermilk so I mixed 1 cup of yogurt with ⅓ cup of milk as a replacement.

    Sooooooo very good! First red velvet cake and came out moist and delicious. Did not use the 6 TBS of red food coloring recipe called for because I think that's just too much and I didn't want it to taste like dye so turned out a little darker red but tasted great. Also recipe said frosting yielded 6 cups but I copied it exactly and it was about only 2. I made a double batch. Still could have used another cup because a lot of the crumbs showed through but we improvised and embraced the crumbs making it sort of a decoration and crumbled some of the cake scraps left over from trimming the cake for frosting, and crumbled those on top of the cake. Looked beautiful and worked out great. Will definitely make again!

    I checked the cake at 35 minutes. It was almost overdone. I would start checking it at 30 minutes. FYI

    my very first 'made from scratch' cake. Now i see the big deal. im going to have to practice at it. Man what agood cake! I accidentally burnt it a little and it was still awesome! Absolutely LOVE the icing!!! Not too sweet, perfect!
