    So good! I used grape tomatoes instead of romas and added some water to help it turn into sauce. Enjoyed it on rice at first and then had the leftovers as a pizza topping the next day

    turned out pretty good - I did not include the eggplant, so cut back on the oil, but it was still too much, so I removed more before bell peppers and onions. Will definitely make again

    I have been looking for a good ratatouille recipe and this is it. I cannot overstate the fact that the flavors in this dish were fantastic. I have found a new love for eggplant. The first time I made this it wasn’t as soupy so I swapped the tomato paste for tomato sauce. Excellent quick and easy recipe!

    Honestly, If I’d known ratatouille was this easy, I’d have made it way earlier. I cut down on tomatoes because my stomachs doesn’t agree with them much. Instead of fresh tomatoes I used one can of diced tomatoes but kept adding water so it’d stay saucy. I put two paprika instead of one and three cloves of garlic only. Paired with garlic mashed potatoes :) Amazing recipe, definitely recommended!

    So so sooooo delicious. I skipped the red pepper flakes but everything else was amazing! I Personally don’t like eggplant but I went with the recipe anyway because ya never know, & it honestly made it MUCH easier to eat, & ultimately for those who have family homes with many different flavor tastes, rest easy because they are easy to eat around & you cannot taste them within the sauce. I will skip eggplant next batch only because I was the only one who wasn’t sure if I’d like it or not. I also used the constellation tomatoes instead. It made for a lovely presentation & I don’t believe the original intended flavor was dampened by this swap. I will be making this again soon! Maybe mushrooms instead of eggplant for those who love mushrooms but not eggplant! ALSO I decided a carb would be nice with this so I made a side of penne pasta to mix in and it was a very pleasant add!

    Had never had ratatouille before. I did this recipe up for a beach dinner last night with a seabass and mushroom cauliflower risotto. Amazing dishes. Everyone loved it!!

    It was sooo good! I made it for my family and we ate it so fast :) I will definitely be making it again. I also added mushrooms and parsley and I think it was a nice touch. I would highly recommend this o some pasta noodles. I enjoyed this so much and I’m so happy with the result.

    Because we all have to stay home and limit our trips to the grocery store, I happened to have most of the ingredients on hand. I did substitute the fresh herbs with dried herb de Provence. This is delicious and so healthy

    Me, as a European are used to these kind of foods and know how they should taste! That recipe was absolutely delicious! I definitely gonna make it again! Perfect for a hot summer day, cause you don't feel stuffed after it! It's light, fresh, juicy and very tasty!

    A little bland for my taste but filling. I added some mozzarella on top which helped.
