    This was a big hit and makes for a great main dish; two adults would have a pretty tough time eating it all in one sitting. Easy to store and plate the next day. Substituting vegetable oil wasn't a big sacrifice. My avocados were a little underripe, so I did what I could to kind of hand-squeeze/mash them after chopping and before adding to the mix.

    Tasty. Modified a bit. Added some more ingredients like blue cheese, light soy Turned out fine Tastes as expected.

    I'm not a big fan of the Avocado oil. It was my first time to ever use it in a recipe. All in all, it is really good. The tomatoes and the avocados hides the after taste.

    Easy to make! This was my first time having quinoa so it wasn’t as good as I thought it was going to be. Definitely a recipe I’ll try and cook again!

    Literally amazing. Super simple, considering the only thing you have to actually cook is the quinoa. So delicious
    I had to improvise and figure out how to put everything together. I didn't see the instructions it still came out excellent.

    This was a yummy salad! I liked it better without the quinoa, but I used a quinoa brown rice mixture. I also didn’t use cilantro or a scallion. Just the veggies and seasonings tasted good to me!
