This was the best egg dish that we have ever eaten!!! I, myself, had never tried Italian eggs but my husband had eaten it before and we both agree that this is tops!!!!

This was delicious! I only eat egg Whites, however, so used 1/2 c to 1 c liquid egg whites (organic) from the grocery. Also, spinach cooks down so I used 1 c chopped organic spinach (more iron) and added 1/2 tsp Italian Seasoning. And, used an Italian blend of grated cheese, in the packaged cheese area of the store.
The entire skillet cooked beautifully and I used a spatula to cut the set dish in two. I ate both pieces!!
PS: The liquid egg Whites are quite watery, but they cook up just as well as regular eggs--and there is less choloesterol and fat. Because of the marinara sauce, there is no lack of taste.

I'm not much for breakfast but, this recipe is quick and easy and delicious and I look forward to it every day now and requires no other ingredients. Yummly........

I would add some fresh basil with the spinach!!! and also can brown a bit of Turkey Sausage Crumbles in skillet while you are getting rest of ingredients ready. Yum! Forgot to mention I chop up 1-2 green Thai peppers from my pepper plant.. seeds and all. Adds that zippy heat with every bite!

This recipe batches together simple ingredients for a hearty and delicious breakfast. I recommend using cooking spray on the pan before putting any ingredients to sauté. I had to eat out of the skillet since the marinara just stuck on the pan but it was still enjoyable!
