The recipe was delicious as I make something similar to this from a different cookbook. My only problem is that I felt the spinach gets added in far too early. When it's added in early, it makes the spinach really soggy and stringy. If the spinach gets folded in at the very end for just a few minutes, the spinach retains color and a bit of texture. Personal preference, but yum otherwise.
