I needed to use up some potatoes and found this recipe today. I followed the recipe, but added a little (1/4 cup) of shredded Swiss cheese and in the last 30 minutes of baking, added a dusting of Hidden Valley Ranch dressing powder. So crispy on the corners, perfectly baked. I will definitely make this again!! Going to be a holiday dinner favorite!
