    Healthy, yummy, and easy…in theory, but assembling all those kabobs is a pain. They cooked well and mostly stayed on the sticks, just a lot of pesto smoke in my face! I halved the recipe and still used a whole thing of pesto, so next time I’ll just mix it with twice as much lemon juice, salt and pepper and use that on everything for a little more zing. Amd maybe some red pepper flakes.
