  • 1 cup light brown sugar
  • 1 1/4 cups vegetable oil
  • 4 eggs
  • 1 Tbsp. vanilla
  • 1 Tbsp. ground cinnamon
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 2 cups flour
  • 2 3/4 cups grated carrots (approximately 5)
  • 8 oz. crushed pineapple (drained)
  • 3/4 cup chopped walnuts
  • 1/2 cup raisins (regular or golden)
  • 1 cup sweetened flaked coconut
  • 8 oz. cream cheese (room temperature)
  • 1/2 cup butter (room temperature)
  • 4 cups powdered sugar

    Carrot cake is my husbands favorite and I have always purchased it because I was always to scared to make it from scratch. Making this one was my first attempt and it was aptly named, my husband thought it was perfect!

    Wonderful went with 3C flour, increased oil about a tablespoon. Increased coconut, raisins and walnuts a little less than a 1/4 C. Very nice sheet cake frosting was spot on but decided to add grated orange a little juice and another 1/2 C of powdered sugar

    Ok the base of this cake turn out great I used only 2 cups of grated carrots and it was plenty The icing was waaaay too sweet yes it’s icing but it was so overwhelming sweet The amount on Yummly says 4 cups of powdered sugar and when you hit directions it says 5 cups I did closer to 4 and it was still too sweet Next time I would probably put in a 1/2 cup at a time, mix and taste it before adding more

    Great recipe! I made for the first time and it was great would definitely make again I would just reduce walnuts for personal preference

    Today is the second time making this cake. Will use mini pans because I like my cake thicker. Any way. The cake was the BOMB! BOMB!!! (GOOD WAY). The recepie was so forgiving it put up with my senior moments 😄: 1) I put the butter in the cake before realizing it was for the icing; 2) did not have pineapple so I used apple sauce and chopped baking apples instead. Must say my icing (which included the butter) was quite good for my effort. Forgot to say I substituted honey for white sugar.

    Delicious!!!! It was moist, fluffy and light, I used only 350 grams of sugar instead of 422 and also less sugar for the frosting.

    This really is perfect. Full disclosure I didn’t have coconut so I left it out. That said I believe this to be one of the best things I have ever made. Do yourself a favor and dive right in. I made cupcakes with this recipe and they still came out beautifully moist.

    Easy to make, loads of ingredients but super moist and tasty! Best Easter cake! Made two rings and 6 muffins. I chose not to ice the cakes. Also forgot the salt 🙈

    I made this with my granddaughter and it was the best carrot cake ever! We added dried cranberries along with orange zest. Truly the best tasting cake I have ever made in my life! We will continue to make this Carrot Cake recipe and make it as one to pass on to future generations in our family ♥️
