  • 1/4 cup olive oil
  • 1/2 red onion (medium, sliced)
  • 1 large carrot (peeled and sliced into matchsticks)
  • 2 cups broccoli florets (cut into matchsticks)
  • 1 red bell pepper (medium, sliced into matchsticks)
  • 1 yellow squash (medium, sliced into quarter portions)
  • 1 medium zucchini (sliced into quarter portions)
  • 4 cloves garlic cloves (minced)
  • 1 cup grape tomatoes (heaping, halved through the length)
  • 2 tsp. Italian seasoning (dried)
  • 1/2 cup pasta water
  • 2 Tbsp. fresh lemon juice
  • 1/2 cup shredded Parmesan (divided)
  • 2 Tbsp. fresh parsley (chopped)

    Delicious! My family loved it! I couldnt find squash so I added pumpkin and it was so yummy! I served it with lemon vutter Grouper fish and prawns.

    So good and so versital!!!! I’ve made this 3 times now for different family members. Each one with a different arrangement of vegetables (1. Yellow summer and butternut squash and zucchini, 2. Broccoli, cauliflower, carrots and sugar snap peas 3. Squash, zucchini, snow peas, carrots, bell peper and broccoli with a hint of sweet onion). Love this recipe with some homemade garlic bread and a good red wine. I’ll be making it again soon for company. Thinking about squash, zucchini, carrots, broccoli and snow peas and some water crescents.😋 This is now a regular go to recipe 🥰

    Recipe is too vague. Amounts from Yummly and the actual recipe didn’t line up. That said, it turned out really good! It was just really difficult to follow.

    I’m sure we could have made it better but this just didn’t come out that amazing. We ended up making it with too much pasta and not enough veggies and it came out not that great.

    Excellent flavour, it goes really well with some cheese and a lot of veggies. The only downside is that as a vegetarian I had to find a way to add some more protein. Other than that, it's great.

    very good recipe. taste and textures with all the veggies, very nice. loved that once the chopping and prep was completed everything could be cooked at the same time. use good parmesan.
